Cuban Style Pork
Serves: 6

Directions Marinade pork in mojo at least 3 hours.

Sear pork in hot pan, then add onion, 1 carrot, 1 chili pepper, salt, pepper, garlic and enough water to almost cover. Bring to a boil, then reduce to a simmer about 1 1/2 to 2 hours, until tender. Remove pork to a plate and cover. Add remaining ingredients and bring to a boil. Reduce until thickened and carrots are tender. Slice pork roast and return to stew. Let simmer for about 10 minutes, then serve with rice and Cuban bread.

Grandma's Goulash

Serves: 8

Directions

Brown meat with onions and garlic. Drain fat. Add corn, bell pepper and seasonings, simmering until veggies are tender. Stir in macaroni, let simmer another 5 to 10 minutes. Serves 6. Top with cheddar.

Note: Serve with corn bread.

Mediterranean Chicken

Serves: 4

Directions

In a large non-stick skillet, saute onions in a bit of broth or water until translucent. Add everything else except olives. Bring to a simmer over low to medium heat, cover. Simmer 35 - 40 minutes, until tender. Stir occasionally.

Stir in olives just before removing from skillet. Serve over rice.

Pakistani Chicken

Serves: 8

Directions:

Simmer chicken in broth and seasonings, covered, for 45 minutes. Serve garnished with parsley.

Notes: Serve with rice.

Aunt Jopi's Sausage & Brussel Sprouts
Serves: 6

Dirctions:

Place all ingredients in a Dutch oven. Cover with water, bring to a boil and reduce to a simmer. Cook, covered, about 20 minutes, until tender. Remove sausage, set aside and keep warm. Drain potatoes and sprouts. Mash together, add butter and milk to desired consistency. Serve with sausage.

Summer Baked Chicken
Serves: 6

Dirctions:

Preheat oven to 350°.

Mix garlic, parsley, salt and pepper; set aside. Place chicken pieces in a 9x13 baking pan. Top each piece with a piece of bacon, a slice of tomato, a basil leaf and sprinkle with seasoning mix. Pour wine into pan.

Bake 45 minutes, basting occasionally.
